There are five of them in the UAE and Amazon is no help at all. Here is the short answer, from someone who reads on one every day.
Most people: the Kindle Paperwhite, AED 849. Bigger screen, waterproof, 12 weeks of battery.
On a budget: the Kindle, AED 329. Same books, smaller screen.
Comics and cookbooks: the Colorsoft, AED 669.
I have had the Paperwhite for about a year. I bought it myself, nobody sent it to me.
It is where I read Schopenhauer's The Wisdom of Life, Atomic Habits, Camus's The Stranger and Animal Farm. A mix of Arabic and English, which the Kindle handles without complaining.
Battery: I charge it once a month. Not a marketing number, an actual habit. A month between cables.
Outside: perfectly readable in direct sun. That is the reason to own one of these instead of reading on a phone.
What annoys me: the storage. 16 GB sounds like plenty until you keep adding to your library, and then you are deleting things to make room.
Would I buy it again? Yes, the same one. The Signature fixes my storage complaint, but not for AED 110 more.

Half the price of the Paperwhite. Smaller screen, no waterproofing, but it reads books exactly the same.
AED 669
Only worth it for comics, cookbooks and anything with pictures. For plain novels the colour changes nothing.
AED 959
AED 110 more for a light that adjusts itself and double the storage. Storage is my one complaint about the Paperwhite, and I still would not pay the difference.
AED 1,649
A different device: a reader you can write on. Only makes sense if you take notes, and it costs more than most tablets.
Sleeps and wakes the Kindle when you open it.

The screen is not glossy, so it stays readable outside. That is the whole point of e-ink over a tablet.
